The problem
A menu written for a customer the location does not attract, cooked in a kitchen that could not sustain it. Slow service, excess stock, waste at peak hours.
What nobody is offering
Visitors come to the Spanish coast looking for the classic beach bar and cannot find it. The classic, done with character, is now the differential position.
The order of work
Menu first. Operations second, because the offer decides the flows. Tableware and presentation last.

The brief
Find people. Constant turnover, hires who did not last, shifts left uncovered.
The finding
A workplace where the trade cannot be practised: crossed hygiene flows, no defined pass, no written procedures, no closed menu and no allergen information.

Six structural decisions to resolve before hiring anyone. The client chose to keep the existing model. A diagnosis is measured by whether it found the problem.
03 · Social collective catering
Training alone protects nobody
The finding
Good practices with no system connecting them. Allergen control held in the kitchen and lost at delivery, which is where the error reaches the diner.
Why it matters here
In social catering the margin of error is absorbed by a resident who cannot eat anywhere else.

A full HACCP system: documented flow, critical control points, verification barrier at delivery, incident protocol.
